Peri-Peri Butterflied Chicken:

Chicken breasts can vary in size, which means by the time the thickest part of the breast is cooked the tips and edges will be overcooked and dry. To avoid this all-too-common scenario pound the chicken breasts between two pieces of parchment. It’s time to make chicken breasts exciting. This is also a great way to turn a single chicken breast into two servings. Here is an Indian recipe for Peri-Peri Butterflied Chicken.

Recipe: Peri-Peri Butterflied Chicken

Ingredients:

Chicken breast 

Peri-peri sauce (store-bought or homemade)

Salt

Pepper

Lemon

Procedure:

  • Cut the chicken breast starting from one end to the other, be careful not to the cut all the way through and leave a joint.
  • Now open the chicken breast, it resembles a butterfly. 
  • Marinate the chicken breast with salt, pepper, lemon and your choice of sauces, at least 3-4hrs of marination is suggested.
  • I used Peri-peri sauce here, which is store bought. It can be prepared at home as well using bird’s-eye chilli and roasted red bell peppers. 
  • You can use oven or stove top to cook the chicken. If using an oven, cook it for 12-15min at temperature 220°.
  • For stovetop, add little oil in a pan and place the chicken directly along with the marination. Cook for 5-7 mins on both sides. 
  • Serve with Sauteed Vegetables and sauce or mayonnaise.
