Paneer Wrap with Mayonnaise

Earlier, when my five nieces and one nephew came over to my place, I had to scratch my head to think of which dish to cook that would please all of them. After a lot of brainstorming, I would resign myself to making at least three different things to keep them all appeased, what with one not liking a particular vegetable or another one not liking rice and so on and so forth. But, after a few such episodes, quite accidentally, I discovered that there was this one thing I could cook using any recipe and it would get eaten cheerfully by all six. And, this special food was paneer! Here is one of the paneer recipes that has been a great hit among my picky six. Here is the procedure of Paneer Wrap with Mayonnaise.

Recipe: Paneer Wrap with Mayonnaise

Ingredients

For Chapattis:

Wheat flour ¾th cup

Oil 1 Tsp

Water for dough

For filling:

Paneer or Cottage Cheese 200 gms (Homemade to make it healthier)

Bell Peppers (Red, Yellow, Green etc) 200 gms

Onions 1 large

Salt to taste

Soy sauce 2 Tsp

Green chilli sauce 2 Tsp

Oil 2 tbsp

For the wrap:

Veg or non-veg Mayonnaise 4 heaped tbsp.

Makes: 4 wraps

Method

  1. Make a dough using the wheat flour and water. Put the oil on the dough after it is ready and massage dough for a couple of minutes.
  2. Cover dough and let it rest for about 30 minutes.
  3. Cube the bell peppers and onion.
  4. Cube or grate the paneer.
  5. Heat oil in a pan.
  6. Add onions to hot oil.
  7. Saute onions till they are translucent.
  8. Add bell peppers and saute until they start softening.
  9. Next, add paneer, soya sauce and chilli sauce.
  10. Add salt as per taste. Bottled sauces usually have some amount of salt in them. Add salt keeping this is mind.
  11. Toss everything together and cover and cook for 2 minutes.
  12. Switch off the flame, cover pan and let filling rest for about 10 minutes.
  13. Empty filling on to a plate and allow it to cool.
  14. Divide dough into four and make chapatis.
  15. Spread mayonnaise on chapatis once chapatis have cooled a bit.
  16. Divide filling into four and put each portion of filling in the centre of each chapati.
  17. Roll chapatis and serve. In case you need to pack them, ensure wraps have cooled down totally before doing so.

Mayonnaise Recipe:Paneer wrap with Mayonnaise

Non-vegetarian Mayonnaise: Take one egg yolk, ½ tsp of sugar, salt to taste, ¼ tsp of mustard, 1 tsp vinegar and 1 tsp lime juice and whisk it all together. Take ¾th cup vegetable oil and whisk it drop by drop into the egg yolk mix. Once all the oil gets whisked into the mix, your mayonnaise is ready.

Note: Not recommended for infants, the elderly and pregnant women due to the raw egg yolk in it. Can be stored in the refrigerator for 3 days.

Vegetarian mayonnaise: Take 1 cup milk. Heat up half of it. Combine the other half with 3 tbsp of cornflour and add it to the hot milk. Heat the milk mixture, stirring all the time, till it thickens. It should thicken to the consistency of thick custard. Cool down the mix and blend in food processor to a creamy consistency. Add 2 tsp vegetable oil and salt, sugar, mustard powder and lemon juice to taste and it gives it a good mix. The mayonnaise is ready!

Note: Can be stored in the refrigerator for 3 days.
